China’s Hohhot, the capital of Inner Mongolia Autonomous Region, has been officially awarded the title of “World Dairy Capital” by the International Union of Food Science and Technology (IUFoST) during the 2026 World Dairy Industry Conference. The recognition builds on the city’s earlier achievements as “Dairy Capital of China” (2005) and “World Capital of Dairy Science and Technology” (2023), reinforcing its growing influence in the global dairy sector.
The city has emerged as a global dairy innovation hub, achieving breakthroughs in high-efficiency processing of hydrolyzed whey protein and eco-friendly extraction of beta-casein through collaboration between leading research institutions and industry. Hohhot also boasts world-leading raw milk quality and large-scale farm productivity and is the only city globally to host two of the world’s top 10 dairy producers. In 2025, the city’s dairy industry chain generated over 300 billion yuan (approximately US$44.2 billion) in operating revenue.
During the conference, Hohhot Mayor He Haidong unveiled the Hohhot Initiatives for sustainable global dairy development, advocating a dairy industry that is greener, smarter, more inclusive, more open and safer. Meanwhile, International Dairy Federation (IDF) Director General Laurence Rycken highlighted that although the global dairy industry faces challenges including climate change, resource constraints and supply chain disruptions, it is also entering a new phase driven by technological innovation, digitalisation and industrial integration. He further noted China’s rapid progress in dairy technology, product quality, industrial upgrading and sustainability, strengthening its position as one of the world’s most important dairy markets.
