As Delhi battles intense summer temperatures, traditional dairy-based beverages such as kachi lassi and Rooh Afza milk sharbat are witnessing a surge in demand, with roadside shabeels across markets, highways, temple areas, and residential colonies serving thousands seeking relief from the heat. Organisers reported a sharp increase in footfall, particularly during afternoon hours, with delivery workers, labourers, auto drivers, and bikers among the most frequent visitors. Harishankar Tripathi, who has been operating a shabeel near Tilak Nagar for the past eight years, said preparations begin as early as 7 a.m. as crowds become continuous after 11 a.m.

The rising popularity of these dairy-based refreshments has also increased operating costs. According to organisers, higher milk prices and growing demand have significantly raised daily expenses. Lajwanti Kaur, who helps run a shabeel near Karol Bagh, said their stall consumes around 120 litres of milk, 35 kg of curd, nearly 25 ice slabs, and several bottles of Rooh Afza every day. She estimated that daily operating expenses exceed ₹18,000 during peak heatwave periods. Organisers noted that packaged milk from brands such as Amul and Mother Dairy is preferred over loose milk due to better shelf life and lower spoilage risk in extreme temperatures, while ice has become one of the largest recurring costs.

The trend highlights the continued importance of dairy beverages in India’s summer consumption patterns, with milk-based drinks playing a key role in hydration and heat relief. As temperatures remain elevated across northern India, demand for lassi, milk sharbat, and other dairy refreshments is expected to remain strong throughout the season.
