Lactose-free milk is emerging as a major growth opportunity for the dairy industry, particularly in the rapidly expanding coffee and café segment. A recent US-based study highlighted that lactose-free dairy milk could help increase overall dairy consumption, as many consumers prefer the taste and nutritional profile of real dairy but avoid it due to lactose intolerance.

Researchers found that offering lactose-free milk in cafés and foodservice outlets could attract consumers who currently choose plant-based alternatives or avoid milk in coffee altogether. The study noted that lactose-free dairy products can act as a “bridge option” for consumers who want dairy flavour but better digestibility, especially in coffee beverages.

However, participants stressed that lactose-free milk must match the taste and texture of regular milk to drive adoption. The findings also showed that many consumers would be willing to switch to lactose-free milk if it is clearly labelled and readily available in retail and foodservice settings. Analysts say this presents a significant opportunity for dairy processors and coffee chains to expand offerings, capture lactose-intolerant consumers and boost dairy usage in the coffee category.
